Ingredients of Majjige saru / buttermilk sambar

  1. It's 1 cup or 2 cups of curd buttermilk.
  2. You need 1small of onion.
  3. Prepare 2-3 of Green chillies.
  4. You need 10 of curry leaves.
  5. It's 1 teaspoon of cumin and mustard.
  6. You need 1 of small tomato.
  7. It's 2 tablespoon of oil.
  8. It's 1handfull of coriander leaves.
  9. Prepare to taste of Salt.

A good way to use left over curd / buttermilk is to prepare this dish. Majjige saru /buttermilk rasam is as the name says rasam using buttermilk. Saaru is rasam is a must item in our everyday meal. My father used to say it is always good to start your meal with something liquid food like rasam rice, tambuli rice …before having the sambar or gojju which aids in.

Majjige saru / buttermilk sambar instructions

  1. Churn the curd into buttermilk add water according to your preference.
  2. Heat oil in wok, add cumin, mustard and green chillies.
  3. Add curry leaves and onions.
  4. After onions are done add chopped tomatoes and salt cook till mushy. And take it off from the flame and add coriander leaves..
  5. After it cool down add buttermilk and mix well..
  6. Serve it with hot rice..

This dish is very close to kadhi prepared in Gujarat & Maharastra. This is a very popular dish in North Karnataka. However, they make this dish very thick like a sambar using a lot of gram flour. Infact, the thicker version of this saaru is majjige huli (mor kolambu/yogurt curry) for North Karnataka people. Buttermilk is known for its hydrating and refreshing properties.
