  2. Prepare 400 ml of full fat coconut milk.
  3. Prepare of some lime zest (optional).

  1. Whisk the coconut milk until frothy and light.
  2. Blend up the pineapple and juice until pureed.
  3. Mix the milk and pineapple together, stir through the lime zest and pour into ice lolly moulds.
  4. Freeze until set, around 4 hours.
  5. You can add some rum to make pina colada pops but don't give them to your children!!.
